Crab & prawn cakes

300g cooked prawns

2 spring 0nions

1 stick of lemongrass,finely chopped

1 red chilli,finely chopped

zest of 2 limes

2cm fresh ginger grated

2tsp sea salt

1 cloves grated garlic

small bunch of coriander leaves

100g cooked white crab meat

1 large egg

75g soft white breadcrumbs

sunflower oil to fry

Dipping sauce

4tsp sweet chilli sauce

1tbsp lime juice

2tbsp fish sauce

pinch of garlic salt

Blend everything together apart from the egg crab and breadcrumbs once all mixed then add the crab and egg and breadcrumbs cover with cling film and chill in the fridge for 30 minutes.

Divide the mixture into 12 and then fry a few at a time in a large frying pan with your oil about 4 minutes each side until golden brown and the drain on kitchen towel.

put your dipping ingredients into a bowl mix.

top with some fresh chopped chilli coriander and a squeeze of lime 🍋
